- Hello. My name is Matthew Russo and I'mhere on behalf of Chiquita Brands to
give you some great holiday recipes. We'regoing to take plain old cornbread and turn
it into Chiquita Banana Cornbread. Let'sget started.
We are going to start with two eggs inyour bowl. Then a fourth of a cup of olive
oil, three teaspoons of baking soda. Wewant two tablespoons of granulated sugar
and we're just going to give this a quickwhisk. All right. Now that that's together
we're going to add in our one and a halfcups of 2% milk. You can use skim. It's
completely up to you. All of our recipescan be modified to your family's tastes or
any dietary needs.
Now that you have that combined, we aregoing to put in our bananas. You just want
three Chiquita bananas, sliced. That youdon't have to whisk in too much, just a
little bit. You want one cup of a wholewheat flour. Now, I always prefer whole
wheat flour just because I like thehealth benefits of it, plus I love the
earthy taste it adds to the food. Then youwant to do a cup and a half of cornmeal.
You can use a white cornmeal or yellowcornmeal. Again, it's completely up to
you. We just want to whisk this together.Now, this is the consistency you want your
cornbread mix to be. Then I have apre-greased pan over here. We're just
going to pour it in.
I always recommend using a decorativepan so this way when it's done baking, you
can just place it right on your dinnertable and serve. It saves for a little bit
of cleaning at the end of your meal. Sonow, I have the oven already preset at 350
degrees. We're going to bake it for about30 minutes.
